Cassia cinnamon is a type of cinnamon prepared from the dried inner bark of an evergreen tree that grows in regions of Southeast Asia. In addition to cassia cinnamon, Cinnamomum Verum (Ceylon cinnamon) is commonly used. Cinnamon spice found in grocery stores may contain both of these types of cinnamon.

- Cinnamon or Cassia is a tree of the Lauraceae family and spice made from its aromatic bark. The bark of Cinnamomum cassia is similar to the bark of true cinnamon (Cinnamomum Verum), which is closely related to cassia.
- Cassia bark has a more pungent, less delicate flavor and is stronger than cinnamon bark. It contains 1 to 2 percent of cassia oil, a volatile oil whose main component is cinnamic aldehyde.
- Cassia bark is used as a flavoring in cooking and especially in liqueurs and chocolate.
